Disable WSUS on Server 2008 how?

Hello,

I have on Windows 2008 Server WSUS 3.1 installed. Everything is fine but I have a small problem: How can I disable updates for Windows Server 2008 via WSUS server?

Because the clients are automatically getting the updates every day 17:00 O'clock and I have disabled the automatisch restart for clients.

I want to get updates of WS2008 from Windows update site everymorning 03:00 and after that to restart itself. But I couldn't do it? Is there any solution for this issue?
